DESOTO, TEXAS – The City of Desoto will be the next location of Roots Chicken Shak, a concept of chicken fried in duck fat by Chef Tiffany Derry.
The Desoto City Council approved of the measure in April as part of an economic incentive package in an effort to bring more businesses to the city.
Roots Chicken Shak is owned and operated by TD2 Concepts, a hospitality company owned by Chef Tiffany Derry and Tom Foley.
“When a community serves as the host to a restaurant from T2D Concepts, they’re getting a company committed to nourishing the community and driving justice and opportunity for those who have been historically denied a seat at the table,” said DeSoto Mayor Rachel L. Proctor.
Desoto will be the third location for the first free-standing structure with a drive-through option for its patrons.
Roots Chicken Shak will serve southern hospitality-style dishes that are rooted in Chef Derry’s southern upbringing.
“We founded T2D Concepts to serve great food, deliver great service, spark meaningful conversation, and create community impact and we are thrilled that the City of DeSoto has embraced our mission,” said T2D Co-Founder Tom Foley.
“We are honored to be part of DeSoto’s important redevelopment project and look forward to partnering with the Council to create great impact in the community.” Said Foley.
Derry is a Beaumont, Texas native that has cooked for former President Barack Obama.
